The Enoki (Flammulina velutipes) is recognizable by its long thin stems and small caps, very prized in Asian cuisine.

Characteristics

  • Color: Pure white (cultivated) or golden-brown (wild)
  • Flavor: Mild, slightly fruity
  • Texture: Crunchy
  • Size: 10-15 cm stems, 1-2 cm caps

Optimal Conditions

Requires very low temperatures (4-10ยฐC) for fruiting and cultivation in bottles or tubes to obtain the characteristic long stems.

Harvesting Tips

Cut at the base when the stems reach 12-15 cm. Low light produces longer stems.

Culinary Uses

Perfect raw in salads, in soups, hot-pots, and stir-fry dishes. Do not overcook to keep the crunch.
